Texture Al dente
Use Broccoli can be used in a wide variety of ways. It makes for a wonderful soup – finish it with goats cheese, toasted walnuts and a swirl of new season olive oil. Broccoli goes very well with Mediterranean dishes. Blanch then sauté with garlic, chili or pine nuts, or with lemon rind and almonds or just sprinkle with a hard cheese like Parmesan. Serve as a side or for an instant main, add to pasta.
Broccoli also goes very well with Asian dishes. Combine it with ginger and soy sauce or add it to a stir fry.
Cooking Tip Most broccoli recipes only use the florets but the more tender top end of the stem can also be used. When cooking, be careful not to overcook; the broccoli will turn dull, go mushy and loose its flavour. Note that in winter broccoli can turn and purple hue.
Selection and Storage Choose firm, evenly green heads with tightly clustered florets. Keep refrigerated in a sealed plastic bag.
